One Pot Basil Tomato Pasta is an easy all in one meal of lightly sauced linguine infused with broth and Italian spices. Simple and delicious!

Weeknight cooking is made so much better with easy meals. This one is a favorite in our house because it uses only one pot and the results are always predictably delicious.

We serve with that frozen garlic toast that you warm in the oven. Nothing fancy, but a simple satisfying dinner idea!

What You’ll Need to make One Pot Basil Tomato Pasta

  • Dry Linguine – We use shelf stable, dry pasta for this dish. You can use spaghetti or fettuccine for this instead, just note that the cooking time will change slightly.

  • Diced Tomatoes – 14.5 oz can. Either regular diced or petite diced will work.

  • Diced Onion – We use about a cup, which is a small onion. White onions, sweet onions, red onions, or even shallots may be used instead.

  • Garlic – For this recipe, we prefer to use 4 cloves of fresh garlic, chopped but it can be thinly sliced or minced if preferred.

  • Dried Basil – If you don’t have dried basil, use Italian Seasoning instead.

  • Red Pepper Flakes – optional, but really a great flavor enhancer and not that much spice!

  • Vegetable Stock – Feel free to substitute chicken broth or chicken stock instead.

  • Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.

  • Salt & Pepper – To taste.

  • Parmesan Cheese – grated or shredded for serving, if desired.

How to Make One Pot Basil Tomato Pasta

Everyone loves a simple one pot meal. This pasta is cooked in broth and Italian spices, infusing all of the flavors and at the same time creating a light sauce. Filling, flavorful and easy to make.

Pasta, tomatoes, onion, garlic and seasonings in a pot.

Break the pasta in half and place into the bottom of a large stockpot or dutch oven.

Add diced tomatoes and onion, chopped garlic, dried basil and red pepper flakes.

Pouring vegetable stock into the pot.

Pour vegetable stock over the top of the mixture.

Adding olive oil into the mixture.

Drizzle olive oil into the pot and stir to combine.

Cover and cook over high heat for 5-7 minutes until the mixture comes to a boil.

Pasta beginning to soften as it cooks in the pot.

Uncover and reduce the heat to medium-high. Simmer for about 15 minutes, stirring often, until the majority of the liquid has evaporated.

Remove from heat and add salt and pepper to taste. Serve garnished with Parmesan cheese if desired. Enjoy!

  • 8 oz dry linguine

Method
