Method
- Preheat the oven to 400 degrees F.
- To a medium roasting pan (or dutch oven) add the corn rounds, halved baby potatoes, sliced onion, Andouille sausage coins, and chopped fresh garlic. Stir to distribute.
- Sprinkle the mixture with salt, pepper, and one tablespoon of the Old Bay seasoning. Pour the vegetable broth over the top of the mixture.
- Cover the roasting pan and place into the preheated oven. Bake for 45 minutes, stirring halfway through, until the potatoes are fork tender.
- Remove the roasting pan from the oven and stir in the shrimp and the lemon slices. Top with the remaining Old Bay seasoning and butter cubes.
- Return the roasting pan to the oven. Cook for an additional 10-15 minutes until the shrimp are cooked through.
- Stir and serve immediately with an additional pinch of Old Bay seasoning and lemon wedges if desired. Enjoy!
