- Warm the milk in a small saucepan over medium-high heat until it begins to simmer. Remove from heat and stir in butter pieces and sugar until dissolved. Set aside to cool.
- In a small bowl, stir together the warm water and 1 teaspoon of sugar and sprinkle the yeast on top. Leave for about 5 minutes until it becomes slightly frothy.
- In the bowl of an electric mixer combine the cooled milk and butter mixture, eggs, yeast mixture, salt and half of the flour. Using the dough hook, on low speed, combine until smooth.
- Add flour 1/2 cup at a time on low speed until the dough forms a smooth ball (your dough may need more or less than the full amount - add slowly and let the dough decide!).
- Lightly spray a large bowl with cooking spray. Remove the dough from the mixer and place into the bowl. Cover the bowl with plastic wrap and allow to rise in a warm place for about an hour or until doubled in size.
- Punch down the dough and cut it in half. Divide each half into 6 equal pieces and roll into balls.
- Evenly space the dough balls on a baking sheet that has been lightly greased or lined with a silicone baking sheet or parchment paper. Cover lightly with a towel and allow to rise 30-40 minutes.
- Place a baking rack in the top third of the oven and preheat to 350 degrees F.
- Bake the rolls in the oven for 20 minutes until golden brown.
- Remove from the oven and cool on a wire rack. Melt the remaining tablespoon of butter and brush over rolls. Enjoy!
