Method
- Break the pasta in half and place into the bottom of a large stockpot or dutch oven. Add diced tomatoes and onion, chopped garlic, dried basil and red pepper flakes.
- Pour vegetable stock over the top and then drizzle olive oil into the pot.
- Cover and cook over high heat for 5-7 minutes until the mixture comes to a boil.
- Uncover and reduce the heat to medium-high. Simmer for about 15 minutes, stirring often, until the majority of the liquid has evaporated.
- Remove from heat and add salt and pepper to taste. Serve garnished with Parmesan cheese if desired. Enjoy!
