- Cut steak lengthwise into strips no more that 1/4 inch thick. Thread the meat strips onto bamboo skewers. You'll need as many skewers as you have strips of beef.
- Lay the skewers in a single layer in 9x13 casserole dish and set aside.
- In a small bowl combine 2/3 cup Asian salad dressing, brown sugar, ground ginger and parsley to create the marinade. Whisk together until well combined.
- Pour the marinade over the beef skewers and cover. Allow to marinate in the refrigerator for 30 minutes to 2 hours, turning the skewers occasionally.
- Meanwhile, in another small bowl, stir together the peanut butter, remaining 1/3 cup of Asian salad dressing and curry powder to create dipping sauce. Refrigerate until ready to use.
- Preheat the grill.Set the skewers in a single layer on the grill rack. Grill until done, anywhere from 3-10 minutes, turning at least once. Remove from heat.
- Serve immediately with peanut sauce on the side for dipping. Enjoy!
