- Peel the apples and cut into small chunks. Place into a small bowl. Add flour and toss until the apple chunks are coated and all flour has been absorbed.
- In a medium saucepan, melt butter over medium heat. Add apples, brown sugar, salt, nutmeg, and cinnamon and stir until well distributed. Then add vanilla.
- Cook for 5 minutes, stirring often until the apples have slightly softened. Remove from heat.
- Lay out 4 egg roll wrappers and divide the mixture between them, about 1/4 cup each. Make a line of filling from one corner to the opposite corner.
- Fold the corner closest to you up over the filling and do the same to the opposite corner. Fold one of the remaining sides up and slightly tuck into the apple mixture. Roll into an egg roll shape, but do not roll all the way.
- Dip a pastry brush (or your finger) into a small bowl of water and moisten the unrolled corner. Finish rolling and press to seal closed. Repeat with remaining egg roll wrappers and filling.
- Place the egg rolls into the basket or on the rack of an air fryer seam side up in a single layer, leaving room for airflow between.
- Using a pastry brush, generously brush the top of each egg roll (or spritz) with olive oil. Generously sprinkle each egg roll with raw sugar.
- Cook at 400 degrees for about 12 minutes. The top of the egg rolls may split open during cooking.
- Remove from air fryer and serve immediately with ice cream if desired. Enjoy!

Notes
These apple pie egg rolls should be enjoyed within an hour or so of baking, while the outsides are crispy and the delicious spiced apple pie filling is still nice and warm. They can get soggy if left for too long.
