Method
- Line a square pan (8 or 9 inch) with parchment paper or foil extending up the sides of the pan. Grease with butter or cooking spray and set aside.
- Heat a heavy bottomed saucepan over medium-low heat. Place butterscotch chips and sweetened condensed milk into saucepan and stir.
- Cook, stirring often, until butterscotch chips have melted and the mixture is smooth. Stir in vanilla extract until well blended.
- Remove from heat and spread evenly into prepared pan. Chill for four hours in the refrigerator before cutting.
- Remove from pan by lifting foil or parchment. Cut into squares. Store leftover fudge in an airtight container. Enjoy!
