Method
- Bring a large pot of generously salted water to a boil over high heat. Cook spaghetti 8-10 minutes or until al dente. Drain.
- In a large bowl, lightly beat two eggs and then add hot pasta to the bowl, tossing to coat the pasta in egg. Set aside.
- Preheat the oven to 450 degrees F with the rack in the middle position.
- Heat a large skillet over medium-high heat. Remove the casings from the sausage and crumble it up with your hands. Add sausage to the skillet and cook for about 5 minutes until cooked through and slightly browned.
- Add the chopped tomato, onion, and spinach leaves to the skillet and cook, stirring occasionally for an additional 5 minutes until most of the liquid has evaporated and the spinach has wilted.
- Add sausage mixture to the pasta mixture in bowl. Add salt, pepper and one cup of the shredded cheese. Toss the mixture together until well combined.
- Lightly spray a 9 inch pie plate with cooking spray.
- Add the pasta mixture to pie plate and sprinkle the top with the remaining 1/2 cup shredded cheese.
- Bake at 450 degrees F for 20 minutes until the top is lightly browned and the pie is set.
- Remove from oven and allow to rest for 5 minutes. Cut and serve. Enjoy!
