Method
- Preheat oven to 350 degrees F.
- Place butter, brown sugar and white sugar into the bowl of an electric mixer and cream together until well combined.
- Add vanilla and eggs and mix until combined, scraping sides of bowl as needed.
- Once combined, mix on medium-high speed for one minute until mixture starts to look fluffy.
- Meanwhile, in a medium bowl, combine flour, vanilla pudding powder, baking soda and baking powder with a whisk.
- Reduce speed on the mixer and slowly add the flour mixture to the wet mixture, about a third at a time, scraping the sides of the bowl if necessary, until fully incorporated. Remove bowl from mixer.
- Set aside 1/4 cup of the chocolate chips. Stir the remaining chocolate chips into the cookie mixture until well distributed.
- Spread the cookie mixture into a 12 inch cast iron skillet, making a flat layer. Sprinkle the reserved chocolate chips over the top.
- Place into the preheated oven and bake at 350 degrees for 25 minutes until edges are browned.
- Remove from oven and allow to cool in the pan for 5 minutes. Cut into triangles and serve warm with a scoop of vanilla ice cream OR give everyone a spoon, put a couple of scoops of ice cream on the top and eat it right out of the pan! Enjoy!
