Method
- Heat 1/4 cup of olive oil over medium-high heat in a deep skillet.
- Once it begins to shimmer, add the chopped onion and garlic and cook, stirring constantly, for 2 minutes, until the onion begins to soften.
- Add both cans of crushed tomatoes and the tomato paste to the onion and garlic mixture and stir well to incorporate.
- Add brown sugar, salt and pepper, parsley, oregano, basil and white wine to the tomato mixture and stir until well incorporated.
- Reduce heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally. Sauce will thicken a bit.
- Add salt, pepper, and any additional desired spices to taste. Use right away, refrigerate for up to 48 hours or freeze for up to a month. Enjoy!
