Ingredients
  

  • 1 1/2 cups peanut butter
  • 1/2 cup butter softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 cups chocolate candy melts
  • cookie icing and sprinkles if desired

  • Stand mixer or hand mixer

Method
 

  1. In the bowl of an electric mixer (or with a hand mixer), combine peanut butter, butter, powdered sugar and vanilla extract. Mix on low speed until completely combined.
  2. Roll into bite sized balls and place onto a silicone or wax paper lined or baking sheet.
  3. Place the baking sheet into the freezer for 20 minutes or until firm.
  4. Melt candy melts according to package directions and coat each peanut butter ball completely, returning to baking sheet after coating.
  5. Decorate with cookie icing or sprinkles if desired.
  6. Chill in refrigerator until chocolate is set. Serve immediately. Enjoy!
