Method
- In the bowl of an electric mixer (or with a hand mixer), combine peanut butter, butter, powdered sugar and vanilla extract. Mix on low speed until completely combined.
- Roll into bite sized balls and place onto a silicone or wax paper lined or baking sheet.
- Place the baking sheet into the freezer for 20 minutes or until firm.
- Melt candy melts according to package directions and coat each peanut butter ball completely, returning to baking sheet after coating.
- Decorate with cookie icing or sprinkles if desired.
- Chill in refrigerator until chocolate is set. Serve immediately. Enjoy!
