- Heat water to between 105 - 115 degrees. Stir in sugar until dissolved. Sprinkle the yeast over top and allow to stand 5-10 minutes, until frothy.
- In the bowl of a stand mixer, combine 3 cups of the flour with the salt. Slowly pour in the yeast mixture and mix on low speed until thoroughly combined. Dough will be sticky.
- Add 1 cup shredded cheddar and the dried dill to the dough. Slowly add remaining flour while mixing on low speed. Mix until the dough leaves the edges of the bowl.
- With lightly floured hands, remove the dough from the bowl and shape into a ball. Place the dough back into the bowl and cover with plastic wrap.
- Allow to rise in a warm place for an hour or until doubled in size.
- Preheat the oven to 450 degrees F and generously spray a dutch oven with cooking spray or line with parchment paper.
- Remove the dough from the bowl and deflate it. Reform into another ball and center it in the dutch oven. Sprinkle the top with remaining 1/4 cup of shredded cheddar.
- Bake, uncovered, on the middle rack of the oven for 30 minutes until browned.
- Remove from oven and allow to cool in dutch oven. Once cooled, slice and serve immediately. Enjoy!
