Pork Scallopini with Lemon Caper Sauce

Thinly pounded pork chops, breaded and pan fried then drizzled with a tangy lemon caper sauce. An easy and delicious weeknight meal!

Ingredients: – pork chops – milk – large egg  – flour – Panko  – olive oil – butter – capers – white wine – chicken broth – fresh lemon

Cover the pork with plastic wrap and using a meat mallet, pound each chop to about 1/4 inch thick.

Season the chops with salt and pepper then dredge them in the flour, dip into the egg mixture and push into the Panko to coat.

Fry about 3 minutes per side until golden brown and remove from pan..

Add butter, capers and flour to the pan and whisk until combined.

Whisk in wine and chicken broth and stir until thickened.

Finish the sauce with a squeeze of lemon and salt and pepper to taste.
