Ingredients: – pork chops  – salt & pepper – olive oil – butter –chopped onion – flour – chicken broth – thyme leaves – Dijon mustard

Season pork chops and fry until well browned and cooked through.

Remove pork chops and add onion, butter and salt. Cook until translucent.

Add flour and stir to coat.

Increase heat and slowly stir or whisk in broth and thyme leaves.

Bring to a bubble and stir until thickened.

Add Dijon mustard and stir until combined.  Season with salt and pepper to taste.
