Baked Chicken Enchiladas

Transform shredded chicken (or pulled pork) and a few  common pantry ingredients into these delicious make ahead Baked Chicken  Enchiladas the whole family will love!

Ingredients – shredded chicken – cream of chicken soup – sour cream – chili powder – butter – onion  – diced green chilies – taco seasoning  – green onions – lime juice – onion powder – garlic powder – flour tortillas – shredded cheese  – enchilada sauce –black olives

In a medium saucepan, combine cream of chicken soup, sour cream and chili powder.

Cook onion in butter then add the shredded chicken, diced green chilies, taco seasoning, and half of the chopped green onions. Simmer.

Stir in garlic powder, onion powder and lime juice.

Stir 1 cup of the sour cream mixture into the skillet

Spoon the chicken mixture into each tortilla and sprinkle with shredded cheddar cheese.

Roll the tortillas, and place seam side down in the baking pan. Cover with enchilada sauce and shredded cheese.

Sprinkle with green onions and sliced olives.

Bake for 25-30 minutes until cheese is melted and bubby.

Serve immediately. Enjoy!
