Sometimes changing one ingredient works and sometimes it is recipe disaster. My husband is doing the Keto diet and I found a recipe for Keto crab cakes. I was super excited to make them. When we went to the grocery store, we bought two 6 ounce cans of crab meat, as the recipe called for. We had everything else so I went ahead with the recipe.

When I mixed everything together I realized very quickly that something was very, very wrong. The next step of the recipe called for forming the crab mixture into balls but what I had was soupy. It tasted good but there were not going to be any patties made from this mess.
I looked the the recipe again to see if I missed something and immediately I saw it. We were supposed to have used lump crab meat. We did NOT buy lump crab meat. We bought the stuff in the tuna aisle, pretty cheap, that resembled tuna. I decided to improvise.
I have silicone baking cups for cupcakes that I have used to make muffins in the air fryer before. I thought that if I added a few things, I might be able to save dinner. I added more almond flour and a few extra seasonings so it tasted good, sprayed the silicone cups with cooking spray (just in case) and spooned the mixture in to the cups, dividing it evenly. This little pan only has seven cups but this would fill eight easily.

I preheated the air fryer at 350 degrees for 5 minutes then put them in. I let them cook in the air fryer at 350 degrees F for 20 minutes.

After the 20 minutes, they looked pretty good but I wasn’t sure that they were cooked all the way. I flipped them out of the silicone cups and decided that just to brown them up I’d put them back in for just a little bit longer.

I put them back into the air fryer for five more minutes at 350 degrees F. They were perfect. My kids thought they were great and my hubby was also pleasantly surprised. They had the consistency of hush puppies to me, quiche to my kids. There weren’t any left! The moral of the story is sometimes recipe mishaps result in great creations. I would make these for a party as an appetizer or absolutely have them for dinner again. Go ahead and buy the cheap crab – these are delicious! Enjoy!

Keto Crab Bites (Air Fryer)
Ingredients
- 2 cans (6 oz) crabmeat NOT lump crabmeat, drained
- 1/2 cup almond flour
- 1 large egg
- 2 tbsp mayonnaise
- 1/2 tsp dijon mustard
- 1/2 tbsp lemon juice
- 1/2 cup bell peppers finely chopped
- 1/4 cup green onion chopped
- 1 tsp Old Bay seasoning
- 1/2 tsp dill
- cooking spray
Instructions
- Combine all ingredients in a large bowl.
- Preheat the air fryer for 5 minutes at 350 degrees F. Divide crab mixture into 8 silicone baking cups.
- Set into air fryer basket or onto rack and cook for 20 minutes at 350 degrees.
- Remove from baking cups and flip over. Return to air fryer and cook for 5 more minutes.Serve. Enjoy!
